If you’re looking for a quick, comforting breakfast with natural sweetness, these banana pancakes are a perfect choice. Ripe bananas add flavor and moisture, while simple pantry ingredients come together to create soft, fluffy pancakes that feel like a treat any day of the week.
My kids love eating pancakes, and this Banana Pancake Recipe is a great way to give them what they crave while ensuring they get some other nutrients, too!
Ingredients
2 ripe bananas
3 eggs
1 cup all-purpose flour
1/2 cup milk (any kind)
1 teaspoon cinnamon
1 teaspoon vanilla extract
A dash of salt
1/3 cup brown sugar
Instructions
Begin by adding all the ingredients to a blender. Blend until the mixture is smooth and has a consistent, pourable texture. This step makes the batter quick to prepare and ensures the bananas are fully incorporated.
Heat a skillet or nonstick pan over medium heat. Once hot, pour the batter onto the skillet in medium-sized circles. Let the pancakes cook until bubbles begin to form on the surface and the edges start to set.
Flip each pancake and cook for another minute or so, until golden brown and cooked through. Repeat with the remaining batter, adjusting the heat as needed to prevent burning.
Serving Suggestions
Serve your pancakes warm with maple syrup, fresh fruit, or any toppings you like. They pair especially well with sliced bananas, berries, or a drizzle of honey.
