Homemade Puff Pastry Recipe

Making puff pastry from scratch might sound intimidating, but with a few basic ingredients and a little patience, you can create a beautifully flaky dough right at home. This streamlined recipe is perfect for beginners and delivers a versatile pastry you can use for both sweet and savory dishes.

Having puff pastries on hand is the key to whipping together quick meals and snacks for your kids. I’ve personally used this puff pastry recipe to make Pop-Tarts, strawberry-covered pastries, pizza rolls, and more for my kids.

Ingredients

  • 1 cup all-purpose flour

  • 1/4 teaspoon fine salt

  • 10 tablespoons unsalted butter (cold)

  • 1/3 cup ice-cold water

Instructions

Start by combining the flour and salt in a large mixing bowl. Keeping your butter cold is key to achieving that signature flaky texture, so dice it into small cubes before adding it to the flour mixture. Using your fingers, a pastry cutter, fork, or food processor, work the butter into the flour until the mixture resembles coarse crumbs.

Gradually add the ice-cold water, mixing gently until the dough comes together. Be careful not to overwork it. Stop once it forms a cohesive, slightly shaggy dough.

Transfer the dough onto a lightly floured surface and roll it out with a rolling pin. Fold the dough over itself and roll it out again, repeating this process several times. This folding technique creates the layers that puff up during baking.

Once the dough becomes smoother and more uniform in texture, shape it into a rectangle. Wrap it tightly in plastic wrap and refrigerate for at least one hour before using.

Storage Tips

You can store the dough in the refrigerator for up to 2–3 days or freeze it for up to 1–2 months. When ready to use, allow frozen dough to thaw in the refrigerator overnight.
